Christmas Crack

This is one of our favorite things to make at Christmas, and we can't keep our fingers out of it.
 
A quick and easy gooey chex mix.
Category: Snacks
Serves: 8 cups

Ingredients
  • ½ box Rice or Corn Chex cereal (I used a 14 oz. box)
  • ½ box Golden Grahams (I used a 12 oz. box)
  • 1 cup coconut
  • ½ cup sliced almonds
  • 1 cup butter
  • 1 cup sugar
  • 1 cup corn syrup

Instructions
  1. In a large bowl, place cereals, coconut, and almonds. Set aside.
  2. In a saucepan, melt butter and add sugar and corn syrup. Bring to a boil, and boil for 3 minutes.
  3. Pour boiling mixture over cereal mixture, and stir to coat.
  4. Turn out onto a buttered sheet pan. Allow to cool before eating.
We love to let it cool and add mini M & M's

What I hate!

I hate that I had to have hysterectomy.
I hate that my Insurance doesn't want to pay for it because I am too young?
I hate that I have small rolling veins that are so hard to get an IV in.
I hate that I have to have a catheter and when I ask to have it removed the nurses all say no.
But the think I hated the very most was that my recovery in the MATERNITY WARD.  Really was that called for?  As if I am not an emotional wreck after having all of my girl parts taken out, knowing that I will NEVER have another baby. 
Anyway on to my Happy List.
I was happy that I have a sweet husband to take care of my.
I am happy that my kids can stop stressing about Mommy.
I am happy that I have great friends that text me and facebook me to see how I am doing
I am happy that all of nurses were very great. and when I freaked out that my arm was swelling she pulled the IV out right then. 
I am happy that I only had to stay one night in the hospital. 
I am happy that I precooked all of the meals so I don't have to stress about cooking.
I am happy that in 6 weeks I will be able to start exercising again.

Maybe when I am off my meds I will write more.

 Alex rocking a pink headband!  I love this little family.
 This is Alex at my house, he stayed with me for a week while his parents were checking out Medical schools.  I envisioned myself saddling a real horse and walking it around for Alex to ride a real horse.  Well in real life Alex hated my horses, that is unless he was playing on the lawn and and the horses were  well away from him in their corral. 
Deer on the way home from the cabin on Labor Day Weekend.  Huge thanks to Carson for all the work he did to get the truck and the razor my kids, and the dogs to the cabin and back home while I suffered from a headache.

Parker is really enjoying football this year.
 

Parker gave Payton his ticket to the Discovery Gateway Museum in Salt Lake City, so we went after we droped Dad off at the airport.

I haven't fallen off the face of the earth, but sometime wish I had!

 
So I am going through some yucky stuff! But I at least wanted to get some cute pictures of the family up. We had had one heck of a summer which turned into a @#$%^ fall, that is going to continue to be a super yucky winter. But come spring people I am going to bloom like a freaking butterfly!!!! Got that world!!! I am going to kick butt next year! But for right now my goal is get out of bed in the morning at least every other day.
